Co‑Op Opens Its Third New‑Concept Convenience Store in Aylesbury High Street, Offering Hot Foods, Deli Selections and Fast Deliveries for Breakfast, Lunch and Dinner.
The Co‑op has unveiled its latest convenience store format in Aylesbury High Street, marking the expansion of its “on‑the‑go” concept. The new format aims to cater to high foot‑flow locations and serve breakfast, lunch and dinner via a compact store design under 600 square feet.
This Aylesbury store is the third of its kind, following previous launches in Solihull High Street and Altrincham’s Stamford Quarter. The retailer describes the format as focusing on “food‑on‑the‑go” and offering a mix of familiar meal deals alongside hot serve‑over counters and deli‑inspired selections.

Operating daily from 07:00 to 19:00, the store provides an array of quick serving options. These include hot products such as hot noodles and bakery goods, plus a small selection of daily essentials such as tea, coffee and bread. Customers may also use the store’s seating inside and outside, which features phone‑charging points.
In addition to in‑store purchases, the location offers online home‑delivery via quick‑commerce partners such as Just Eat, Deliveroo and Uber Eats, including delivery of the Co‑op’s “Irresistible” pizza range.
The product development for this format is notable. Breakfast items include all‑day breakfast meal‑pots, berry‑burst bircher and apple‑and‑cinnamon overnight oats. For lunch, the deli‑inspired offerings comprise smoked salmon, egg and spinach pots; a sweet‑potato bhaji wrap; falafel and houmous salad bowls; chicken, bacon and avocado Caesar wraps; and tomato, mozzarella & pesto focaccia bagels. The store also serves Costa Coffee, hot baguettes and buttermilk chicken tenders for hot‑lunch or snack‑on‑the‑go occasions.

Commenting on the launch, Co‑op Area Operations Manager Shane Redclift said: “The whole team is excited to launch our new concept store in Aylesbury – we are looking forward to being part of the community, and welcoming members and customers into their new Co‑op store. Whether working, shopping or socialising in the high street area, we’re here to offer breakfast, lunch or dinner on‑the‑go.”
Meanwhile, Co‑op Director of Store Optimisation Gary Williams added: “We are delighted to grow our ‘on‑the‑go’ concept with the unveiling of our Aylesbury store. We continually look for new ways to get closer to our customers and deliver added convenience. Our new concept brings together an innovative blend of food‑to‑go propositions, with freshly prepared products designed to stand out in the high street and serve this vibrant and thriving community. Catering to ‘on‑the‑go’ meals throughout the day you will find delicious products, quick service, quality and value, and all in a great convenient location.”

The launch forms part of Co‑op’s wider expansion plans: the company has revealed it intends to open or refurbish 50 stores ahead of Christmas, and this new format sits alongside its traditional convenience‑store portfolio across the UK.
